It's rare to find a Michelin starred restaurant with just one wine on the list, but Riojan chef, Felix Jimenez teamed up with Bodegas Ontanon to create the perfect wine for sushi. The Akemi Blanco remains the only wine on their list, and we can confirm that it is the most delicious pairing with sushi!
The Akemi Blanco is made from 100% old-vine Viura from a single plot. Aged in predominantly 2nd use American oak, the wine is beautifully rounded and balanced with lively acidity. The tropical and stone fruit come first followed by the signature texture and feel.
