Blanc de Blancs simply means a Champagne made from white grapes, so this is 100% Chardonnay. Blanc de Blancs Champagnes tend to be crisper with more focus on the citrus fruit profile. The Ayala is pale yellow, with white gold glints and a very fine bubble. The nose is delicate, but still very expressive with wonderful aromatic freshness with notes of pomelo, white fruits, lime tree and delicate hints of pineapple and ginger.
